What do you have to remove from a Street bike or add to turn it into a Full Blown Trakky ???????

If its a Gixxer, take the headlight off it.
Easy...piss anything off you need for the road and just add raceglass and rearsets. :ayyy:
Be careful not to throw out your angle bank sensor. You'll need to remount that level somewhere on the front fairing stay....otherwise she wont start.

Just a quick run down is as follows:
Remove all body work & lights.
Install race glass (I have found it is cheaper to just buy full race glass kit than just a few bits).
Fit stick tyres.
Guess what thats it really, you need to leave instruments & hiss installed or your bike wont start, unless you want to change ECU which is a cost you don't need to pay if not racing. Honda's hiss is linked to key, ECU, instruments change any of these parts from none original on bike your bike will not start. You can buy either a US ECU, HRC, etc to remove hiss completely but as I said you don't need to.
You then can start to add gear to make you faster:
Better suspension
Better steering damper (I hear if you have the HRC ECU the electronic one works much better for track conditions)
Full exhaust
Rear sets
Braided lines
Race stands (remove side stand only if you have these)
Lock wire
etc

It has everything you will need to know but ZRoys has covered most of it although there can be significant differences between a 'track bike' and a 'race bike'.
Generally, a 'Track Bike' does not need to meet the Motorcycling Australia MoMs rules and therefore much of what ZRoys has mentioned does not apply. In truth however, a dedicated track bike should be setup to meet the MoMs due primarily to the additional safety requirements (ie. lockwiring) which improves the safety of everyone on the track with you should something go wrong.
As to some of the differences, a track bike used for a ride day can run coolant or any other substance in the radiator, try that on a race day and we (the scrutineers) will send you back to flush it out any number of times, and yes we do check.
You may also need to consider that if you are going racing you will need to check the requirements of what you are allowed to do to a motorcycle and remain legal for the category in which you are choosing to compete. As an example, should you be running a 600 whether you have a lsip-on or full system exhaust can determine your eligibility, so decide the class and read the relevant section of the MoMs if you choose racing.
If you choose Trackdays only you could theoretically leave the bike with road gear but for pure cost efficiences remove road gear (lights etc) and replace fairing with track as others have said.

I claim to be no expert in trackbikes or tracktime, but I would of thought the first thing to look at would be suspension, wether an upgrade of whole, internals or adjustments of, even for road usage .
